Vegas Uncorked is culinary heaven
Each year, with the coming of spring, my culinary sense of anticipation increases because the country's best culinary event, Vegas Uncorked by Bon Appetit, is just around the corner - it took place over Mother's Day weekend this year.
Virtually every chef who lends his or her name to a Vegas restaurant appears at the four-day food and wine extravaganza, courtesy of Bon Appetit Magazine and a contingent of upscale hotels, including Caesar's Palace, Wynn and Encore, Bellagio, MGM Grand and Mandalay Bay.
For gastronomes of all stripes, this is culinary nirvana, and you don't have to fly all over the country to sample the best fare this country has to offer.
Every year starts with the Champagne Saber-Off where all the chefs gather for pictures and this year Chef Julian Serrano of Picasso Restaurant had the honor of being the one to shave off the top of a French champagne bottle using the saber blade, thereby formally ushering in the festivities.
Our first event was Shabu Shabu at the Jasmine Restaurant at Bellagio, where the ancient cooking technique of "swishing" various ingredients in a boiling water bath to cook them was presided over by Philip Lo, executive chef at Jasmine, and Edmund Wong, executive chef at Bellagio.
This was an interactive lunch where everyone cooked their own sliced kobe beef, diver sea scallops, shiitake mushrooms, glass noodles and assorted vegetables and dipped them in either satay sauce, sesame seed vinegar or fresh chile soy sauce.
The food was paired with Hitachino Nest Commemorative Ale and Asahi Black Kuronama Lager.
Thursday evening we attended the "Come Fly With Me" wine dinner at Sinatra Restaurant at the Wynn Hotel. With Tina Sinatra and family in attendance, the inaugural vintage of the Sinatra Family Estates "Come Fly With Me" cabernet sauvignon, Napa 2007, was introduced.
Chef Theo Schoennegger, who was one of the few chefs to be invited to cook for Frank Sinatra at his estate, presided over this luscious dinner, which included Santa Barbara spot prawns with cannellini beans and rosemary oil and agnolotti al'amatriciana (cacciota cheese-filled pasta pockets in a spicy tomato/pancetta/onion sauce) - a perfect match with the Sinatra Family Estates La Voce sangiovese Tuscan 2008.
