Fruit Flag

29 large strawberries

30 large blackberries

7 or so large bananas

Lemon juice

Hull and halve strawberries and set aside. Arrange 30 large blackberries in the upper left corner (like an American flag's stars) of a white serving tray. Cut 58 banana slices, 3/4-inch thick into a bowl. Sprinkle on lemon juice and toss gently to prevent browning. Assemble banana slices in rows (as in the flag's stripes) and top each slice with a strawberry half.

Red, white and blue swags stand out with patriotic swagger against a chocolate buttercream backdrop. Owner Richard Bailey pipes on alternating red and blue flourishes as finishing touches on a star-spangled cake at That Special Touch in Pearl.

Shell and string work in colored icing run decorative circles around the butter cake's sides. "It's not any particular design," says the pro of 28 years. "It's an old-timey wedding cake design, incorporated with red, white and blue."

Tiny flags on top herald the holiday ahead.

Red, white and blue rules the party roost this Fourth of July weekend. So expect the flag to fly everywhere, up to and including on and in your food.

Whether it's stars or stripes or more, bakeries are having fun for the Fourth.

Red, white and blue star-shaped cookies will celebrate the Fourth of July at Campbell's Bakery. "They're the iced teacake cookies - the cookie that Campbell's Bakery is famous for," said Josie Monk at the bakery.

Red, white and blue decorated shortbread cat cookies perform double-theme patriotic duty at Crazy Cat Bakers.

The swags on That Special Touch cake imitate flag bunting, but the bakery might also opt for a popping firecracker, appropriately colored edible sprinkles or more for Fourth of July party cakes.

"American flags are really popular - whether they're drawn on, or little flags," Bailey said.

Home cooks often rely on ripe fruit and whipped cream to get the colors right.

A flag cake usually appears among the holiday celebration's desserts at St. Richard Catholic Church's picnic for the Fourth of July, said Raymond Barry, director of Christian services.
