Business Spotlight: Nick's Barbecue
This week, we caught up with Nick Andricopulos, the owner of Nick’s Barbecue in Romeoville (as well as Burbank, Palos Heights, Tinley Park and Homer Glen), to learn more about this longstanding family business.
Romeoville Patch: When did the Romeoville location open?
Andricopulos: Our Romeoville location opened in 2004. It is our fourth store. Our original location is in Burbank, which opened in 1986, and our newest location is in Homer Glen, which opened in 2008.
Patch: How long have you been in the restaurant business, and how did you get started?
Andricopulos: Nick's Barbecue started in 1986, but my dad and uncles started in the '50s in Roseland as Nick's Fat Boy. They got out of the business in early '70s. After working as a bread route/salesman serving restaurants for 10 years, I decided to resurrect Nick's Fat Boy in 1986, but because of our customers’ loyalty to our barbecue, we eventually changed the name to Nick's Barbecue.
Patch: Where do the recipes come from?
Andricopulos: Our recipes are handed down from my mom and dad and have been adjusted over the years as we expanded our menu.
Patch: If someone has never been to Nick's, what do you suggest they order?
Andricopulos: Of course, our customers would recommend our baby back ribs (full or half slab), but favorites include our pulled pork sandwich, grilled chicken sandwiches abd salads, gyros, fresh Angus burgers, Italian beef and our world-famous cream of chicken with rice soup.

Sandwich Recipe – The sandwich, in my humble opinion, is food at its best– which is why I’m always looking for a new recipes. I’m a strong believer that sandwiches can be the most exciting, tasty meals around. Really! With a little creativity and great, fresh ingredients you’ll be looking at sandwiches in a whole new light.
